Ingredients
1 (1 1/2 lbs) pork tenderloin
1 1/2 tsp five-spice powder
1/4 cup hoisin sauce
1/4 cup soy sauce
1/4 cup honey
3 Tbs rice wine vinegar
2 Tbs peanut oil
2 cups snow peas
1 cup carrots, sliced
1 shallot, peeled and sliced
2 cloves garlic
1 tsp fresh ginger, grated
2 (3 oz) pkgs ramen noodles, for serving
Directions
  1. Cut pork into 1-inch chunks; place in bowl. Rub meat with five-spice powder. In measuring cup, combine hoisin sauce, soy sauce, honey and vinegar. Add 1/3 cup of sauce to pork. Stir to combine. Cover; marinate for at least 1 hour. Reserve remaining sauce for the stir-fry.
  2. Place large skillet or wok over high heat. When smoking hot, add oil and pork. Stir-fry until meat is seared on all sides. Remove from pan; set aside. 
  3. Add snow peas, carrots, shallot, garlic and ginger to pan. Stir-fry for 1 to 2 minutes, or until vegetables are soft. Add pork and remaining sauce to pan. Toss to coat. Add 1/4 cup water to pan. Cook for 2 to 3 minutes, or until all ingredients are heated through and sauce has thickened and reduced slightly. 
  4. Prepare the ramen noodles according to the package directions. Discard the seasoning packet. Serve the pork on top of the cooked noodles.
